They made it much easier to sell meat.
It impacted the meat packing idustry because the rail networks allowed for different trapes to take place and also helped with the amount of meat that could be shipped to one pleace, as well as cattle to the factories.  This greatly helped with profit gains because they could produce and ship out more meat.
